Positive reaction for enzyme
Ingredients giant Danisco has started to produce Chymostar Supreme, a proprietary, fermentation-produced chymosin, which is designed for use in cheese production.
Vice president of the Danisco Cultures Division, Doug Willrett, explains: "As a leader in cheese cultures, we can better serve our customers by having Chymostar Supreme in our portfolio, and now we have the internal capabilities to produce it, which we acquired through the acquisition of Genencor in 2005."
Danisco's Genencor Division develops and manufactures industrial enzymes and with the new chymosin added to its portfolio, the company now provides a full line of cultures and enzymes - two key processing heads in cheesemaking.
"Chymostar Supreme matches the quality and performance of other commercial coagulents and gives cheesemakers another source of fermentation-produced chymosin," says Willrett.
