Strawberry taste is recaptured
Had we forgotten what real strawberries tasted like? That's what Create Flavours felt when it started a development programme to create its own new strawberry flavour.
The result was Royal Sovereign strawberry flavour which is now available in both natural and nature identical versions and liquid and encapsulated forms.
The first step in the two year development programme was to identify the tastiest strawberry. So a search of historical horticultural literature led the company to identify five rare varieties with potential.
The next step was to grow them and select the tastiest variety. Royal Sovereign came tops.
The Flavometrix team at Nottingham University was called in to use modern technology to analyse the flavour. From this, Create Flavours was able to produce its new flavour.
It is the first time this particular variety has been analysed, says the company. And the new flavour has a wide variety of applications, including bakery, dairy, cereals, and drinks.
