Bakers looking for a fresh angle in the cake category may be inspired by Dawn Foods' Extra Moist Muffin Mix. Available in original and chocolate flavours, the mix provides an open, irregular texture, which suspends inclusions well and always domes, claims the firm.

The product is suitable for a range of formats including traditional muffins, loaf cakes or family cakes, and is free from trans fats.

"Our new Extra Moist Muffin Mix combines quality with the versatility needed to dramatically extend the sweet bakery offering. Alongside novelty and variety, premium offerings with a 'just made' look will add value to the product, win sales and increase profit," says Dawn Foods' marketing director Maggie Dagostino.

The firm's research shows that consumers are looking for variations on old favourites and the company suggests adding chocolate chunks or nuts to the muffins.

Dawn Foods also offers Spread 'n' Gloss topping, crumble, sugar nibs or glaze, which can be used to spice up the muffin mix.
