Pea protein enhances nutritional profile
The increase in vegetable protein consumption has led ingredients manufacturer Roquette to develop a new protein sourced from peas.
Nutralys is highly digestible and suitable for vegetarians, claims the company. It also acts as a binder for other ingredients and, when extruded, it becomes a textured vegetable protein imitating meat.This means it can be used in ready meals to part-replace meat, which can help reduce the meal's saturated fat content and also limits water loss during cooking.
Nutralys can also be added to cereal products to improve their amino acid profile by increasing lysine content.
Another benefit of using the ingredient is that it permits new health claims such as 'protein source' and 'rich in protein', which may appeal to consumers.
