NPD makes the cookie crumble
Yorkshire-based ingredients firm Pecan Deluxe Candy (Europe), has been picking up a few tips from its US parent company.
The firm is busy adjusting recipes from its Dallas-based owner to suit European tastes. The first product to be modified is Cookies and Cream - soft chocolate biscuits broken into pieces, part covered in cream fondant and coated to create an ice cream inclusion. The barrier coating is important because it prevents the ingredients from going soggy when they are added to ice cream, says Pecan.
"Ideas from America, a big influence on trend-setting, are supplemented by customer requests," says the company, which also plans to launch Cookie Dough and Choc Truffle at its newly installed new product development department.
The firm is also working on ice cream, frozen desserts and foodservice as well as a major cheesecake project.
