From zero-fat spreads to coconut cream replacements, Unilever's former chief scientist has more than 60 granted patents to his name. After 25 years at the cutting edge of industrial research, however, he recently parted company with his old employer and took up a post as professor of soft solid microstructural engineering at the University of Birmingham, where he is doing some groundbreaking work on a range of food-related applications.
