ADM slashes sat fat content in sausages

Archer Daniels Midland (ADM) cut saturated (sat) fat by more than 40% in UK-style breakfast sausages using its soya concentrate Arcon and ADM pure vegetable oil, according to a recent study.

The research was conducted by Nikki Asuming-Bediako of Bristol University's School of Clinical Veterinary Science.

"The findings prove a substantial reduction in sat fat of over 40% can be achieved without adversely affecting production or eating quality," said Jo Bruce, research and development manager, ADM Trading.

* ADM Cocoa last month unveiled ice cream coatings with 43% less sat fat than coconut oil, but similar texture, melting and freezing traits.
