Last year’s bumper ice cream sales have prompted flavours and colours firm Wild to create new ice cream flavour concepts.

Sales in Germany rose by 1% to 522Ml in 2014, while Russia and Great Britain saw sales rise by 2.1% (to 490Ml) and 1.7% (to 396Ml) respectively for the same year, according to Wild.

The new concepts allow manufacturers to turn simple ice creams into dessert products. They also offer the ability to coat products, such as lollies, with ice cream, according to Wild, which was last year acquired by the Swiss ingredients firm ADM.

Multifaceted

As well as a selection of chocolate flavours, including milk chocolate, bittersweet and semi-sweet, Wild has also developed multifaceted ingredients, such as pears belle Helen and chocolate orange. The items can be used to ripple through an ice cream or to be deposited as a ‘secret centre’.

“The flavours and colours are based on natural foodstuffs, and they satisfy the highest standards in terms of natural ingredients,”​ Wild says.
