New fungal enzyme to fight lactose intolerance

Biocatalysts' new product Lactase 849MDP is a fungal enzyme that can be used in Kosher and Halal applications.

The firm says Lactase will open up new opportunities for the dietetic and dairy sectors as it can be used to remove lactose in dairy food products such as yogurt, acid whey and sweet whey.

It can also be used in dietetic preparations for sufferers of lactose intolerance as it is convenient for tableting and encapsulation.

Lactose intolerance is the inability to digest lactose. This is the primary sugar in milk, which needs lactase (from the small intestine), to break it down in digestion. If not absorbed, it ferments, which results in abdominal pain and bloating.
