Producers of cheeses such as Manchego, Gouda and Edammer are now able to halve their ripening times without compromising on quality, the maker of a new cheese culture has claimed.

Delvo Cheese CT-Taste allows cheesemakers to cut ripening time by up to 50%, resulting in significant energy savings around control temperature and humidity, DSM said.

Save around £180,000

According to its internal data, the production of 1Mkg of continental cheese with a typical four-week ripening time would save around £180,000 in production costs, if ripening time is halved.

“Delvo Cheese CT-Taste opens up new opportunities for companies that want to produce their cheese more efficiently and sustainably,”​ said Gert van den Hoven, product application specialist for cheese at DSM.

‘Without impacting the taste’

“More importantly, it does this without impacting the taste of the final product, which is key for consumers.

“This is a welcome solution, as dairy companies strive to deliver great-tasting, high-quality nutrition.”
