Ingredients specialist DSM claims its new range of cheese cultures, specifically developed for filled pastas, can extend shelf-life.

Delvo Cheese CP-200 has been developed for the production of filled pastas and offers sustainable and consistent production of the stretched curd cheese known as pasta filata. The product is also claimed to increase processing flexibility and reduce product loss.

When used in conjunction with the coagulant Maxiren XDS, manufacturers can enhance the flexibility of the production and processing of the cheese, says DSM.

‘Bright science’

“We have applied our bright science to optimise our existing cultures for pasta filata, which are already well known and appreciated,”​ says Marjorie Saubusse, DSM’s marketing manager for cheese.

Manufacturers now have a new solution to process and functionality issues, she adds.
