‘Traditional’ British flavour with less fat

A fat-reduced cocoa powder that encapsulates a ‘traditionally British’ chocolate flavour has been developed by Archer Daniels Midland Company (ADM).

ADM’s D11LA will be officially launched at the trade show Gulfood Manufacturing in Dubai this month and has already experienced success in the dark chocolate market, it said.

The product was developed to provide consumers with the highly desired taste of milk chocolate with a hint of caramel, which is a traditional attribute of British chocolate.

Ingredients

“British chocolate is made with crumb, a compound ingredient comprised of sugar, milk and cocoa mass and used for creating milk chocolate,”​ said Krista Evers, product service and development manager at ADM.

“During processing, cocoa mass delivers unique flavour, which is typically unattainable in compound coatings, as cocoa mass is incompatible with vegetable fat.”
