A new range of organic chocolate pieces with low glycaemic and protein-enhanced benefits has been introduced by German firm Herza.

Available in white, dark and milk chocolate flavours, the range includes pieces made without sucrose. Instead, their sweet taste is achieved by using coconut sugar, South American fruit lucuma or rice syrup. The pieces are designed for decorating muffins, cakes and gateaux.

More protein than standard milk

Protein-enhanced pieces, which are claimed to offer 30% more protein than standard milk chocolate, are also on offer. Additionally, there are organic yogurt compounds, suitable for muesli-based products. Their special attribute is that they are made with cocoa butter instead of palm fat as a base.

“As far as their sensory and physical properties are concerned, the small organic chocolate pieces in no way differ from the conventional range,”​ said Herza sales director Carsten Braumann.

“The chocolate pieces have excellent bake stability too, so they are ideal for use in cakes, biscuits or bakery mixes.”

‘Bio’ seal guarantee

Herza claimed to use only raw materials that are known to have been grown organically. The company offers a ‘bio’seal guarantee, where production, processing and trade all adhere to the European Commission regulation on the manufacture of organic products.

Under the guarantee, every participant in the organic chain must show it has met the relevant requirements. Annual checks are carried out by independent, government-organised institutions.
