A Scottish-based chocolatier has developed a truffle range with no hard chocolate shell, which was previously available only to Michelin star chefs.

Iain Burnett, of The Highland Chocolatier, says the product has only been achieved due to a technological breakthrough.

“The naked truffles are now served in a sealed foil gold pack with an oxygen-absorbing smart food tag to keep the fresh cream truffles natural and free from any artificial sugars and preservatives,”​ the company says.

Volcanic island

Burnett uses a uniquely-flavoured single-origin cocoa from the volcanic island of São Tomé situated in the Gulf of Guinea which he claims has intense, fruity, aromatic and spicy properties.

“We use no artificial additives or preservatives, only the best exotic spices and ingredients are infused to create our flavours and textures to delight the palate,”​ he adds.
