Synergy flavours target savoury bakery market

In response to "consumer demand for authentic cheese profiles", global ingredients manufacturer Synergy is launching a range of cheese flavours that can be incorporated into dough.

Declared simply as 'cheese' or 'natural flavour', these ingredients offer high levels of thermostability and ensure cheese profiles are maintained during heat treatment, according to Synergy.

"Cheese-flavoured bread is a lucrative sub-segment of a bakery market that is worth 4bn in the UK alone and working with cheese profiles opens up a world of opportunity for manufacturers," says Sarah Pearson, category marketing executive at Synergy.

According to Synergy's research, cheese is one of consumers' top five bakery ingredients.

Synergy's Cheese Flavour Solutions are compatible with speciality breads, scones, bagels and muffins. Synergy also has a range of cheese flavours for ready meals, soups and sauces.
