Turning bread into a pumpkin

The process used to make pumpkin seed oil creates pumpkin seed press cake, which - until now - has been considered a waste product.

Pumpkin seed press cake consists of the husks of ground pumpkin seeds that have been roasted and pressed to extract their oil content.

An Austrian-based pumpkin oil manufacturer F.URL & Co used to sell its 'waste' pumpkin seed press cake as animal feed. Until it realised that the meal presented a new opportunity to produce a healthier type of bread.

Working with a local bakery, it determined that the low-fat content and roasted, nutty flavour of the ground pumpkin seeds in the press cake made it an excellent ingredient to make pumpkin-flavoured speciality baked goods. The ground seeds have a high dietary fibre content and help to make bread with a longer shelf-life.

The product is already being used in bread in Austria and can also be used in cakes and biscuits.
