Bakers looking to serve people on a low glycaemic index (GI) diet may be interested in BakeMark UK's new bread base mix.
Seeds 'n' Grains Concentrate is a versatile, multigrain bread base mix that delivers a bread with a GI rating of 50.
The ingredient also allows bakers to comply with the Food Standards Agency's one percent salt guideline, well in advance of the 2010 deadline, said the firm. The mix contains a blend of sunflower seeds, linseed, pumpkin seeds, malt, oats and fibre-rich maize and wheat bran.
David Astles, head of trade marketing said: "Low GI eating plans recently received a shot in the arm from new research conducted at Oxford Brookes University. According to the university's Professor Jeya Henry, swapping from high to low GI bread is an effective way to make a significant difference to daily diet, since bread is such a staple UK food."
