Demand for locally-sourced UK meats in the run up to the London 2012 Olympics presents new product development (NPD) opportunities for TMI Foods, according to its head of innovation Christian Binney.
Binney has just joined TMI, which makes cooked bacon, sausages and roasted vegetables for processors and retailers, from Honeytop Speciality Foods.
"We're looking at the Red Tractor logo and how we can give our product range a bit of a British slant," he said, adding: "We are developing a range of maple, honey and smoked flavours."
Traditionally cured, smoked and rubbed hams; cooked bacon and grilled and smoked vegetables offered potential as sandwich and ready meal components, added Binney.
