The fifth taste

Ingredients supplier Jardox has created an umami paste that will add the savoury fifth taste to food.

Until recently it was thought that we had four basic, or 'primary' tastes, which cannot be replicated by mixing any of the other primaries: sweet, sour, salty and bitter. However, umami is now considered the fifth primary taste.

The Japanese word roughly translates as: beefy, meaty, savoury, robust, hearty and broth-like.
