Power's in the mix for powder

A new variant of caramel colour powder has been introduced by global colour manufacturer Sethness-Roquette, based in Merville, France.

Because of its lower tinctorial power compared to the powder currently in the range, the pigment, 3200PW, can be used for applications where the final colour is lighter. It can be incorporated into dry mixes at a dosage still manageable with standard equipment. It also has a redder tone than the existing product, conferring a more appealing and appetising colour shade, says the company.

The pigment can be used in premixes for the bakery industry or in dry preparations for sauces and soups. Sethness-Roquette says 3200PW works well during mixing, providing excellent stability. It is packaged in 25kg bags with polythene liners and has a shelf-life of two years when stored in cool, dry conditions.
